What to do with leftovers?
So tonight I was left all by my lonesome for dinner in Beaverton.
My idle hands settled on making homemade pasta. I started with the basic pasta dough recipe. While I was waiting for the dough to chill I realized I had no idea what I was going to put in the ravioli, so I got resourceful. The result was sweet potato filled ravioli with butter sauce and pine nuts.
Not bad for bachelor.

Yum - Sounds so warm and toast-ee. I have two sweet potatoes sitting on the counter and I am now feeling inspired to experiment!
It ended up quite tasty. I still need to work on my pasta dough skills though. The noodles were a little on the chewy side.
